B.E.A.T. Sandwich

Bro, this sammy is baller! I love breakfast for dinner and this is the ultimate easy breakfast for dinner. Feel free to get creative and add whatever else is in your fridge: banana peppers, arugula or spinach, red onion… it all works with this baby! It’s a classic straigh outta Yumtown!

B.E.A.T. Sandwich

INGREDIENTS

3–4 strips thick-cut bacon, cooked
2 large eggs
1 pretzel bun
1/2 ripe avocado
1 ripe tomato, sliced
1 slice cheese (pepper jack, cheddar, or mozzarella)
1 Tbsp butter (for toasting)
1 Tbsp mayonnaise or aioli
Salt and black pepper to taste

DIRECTIONS

  • Toast the bun: Spread 1 Tbsp butter on the cut sides of the pretzel bun and toast in a skillet until golden brown.

  • Make the egg patty: In a bowl, whisk 2 large eggs with 2 Tbsp milk, plus a pinch of salt and black pepper. Pour into a lightly greased skillet over medium-low heat and cook slowly, gently stirring at first, then letting it set into a soft scramble. Shape it into a patty about the size of your bun and cook until just set.

  • Prep the avocado: Mash ½ ripe avocado with a pinch of salt and pepper.

  • Assemble: Spread 1 Tbsp mayonnaise or aioli on one side of the toasted bun. Layer on the cheese, bacon, sliced tomato, mashed avocado, and the egg patty.

  • Top with the other half of the bun and serve warm.
