Shallot Honey Mustard Vinaigrette
I have been craving salads lately but I really didn’t want store-bought dressing. Then I remembered, hey! I can make dressing! Duh! This dressing rocks my world. And don’t you just love when you know exactly what is in your food?
INGREDIENTS
2-3 shallots, sliced thinly
⅓ cup extra-virgin olive oil
2 Tbsp apple cider vinegar
1 Tbsp Dijon mustard
2 Tbsp honey
1 medium clove garlic, pressed or minced
¼ teaspoon fine sea salt
DIRECTIONS
In a 1-cup liquid measuring cup or small bowl, combine all of the dressing ingredients (2-3 shallots, peeled and sliced thinly with a mandolin, 1/3 cup extra virgin olive oil, 2 Tbsp apple cider vinegar, 1 Tbsp Dijon mustard, 2 Tbsp honey, 1-3 cloves garlic, minced or grated, and 1/4 tsp salt).
Whisk until the mixture is well blended.
Pour over salad or in to ball jar* to save for later.
*I like to double the recipe and it fits perfectly in a 16oz fluted ball jar, pictured.
