Squash, Zucchini, & Orzo Salad

This is delicious no matter what - hot or cold.

INGREDIENTS

2 yellow squash, sliced
2 zucchini, sliced
2 green onions, sliced
1 box orzo, cooked
2 Tbsp parsley
1 cup feta cheese
Salt & pepper, to taste

 

DIRECTIONS

  • Saute zucchini, yellow squash and scallions in olive oil until tender. Toss with cooked orzo, parsley, feta, salt & pepper.
